Spring Side Salad

Vibrant, fresh and crunchy, this healthy side salad is perfect for Spring and Summer.

Recipe Method

  • Chop the lettuce and cucumber.
  • Add to a large bowl with a handful of spinach.
  • Add a small handful of spinach to a blender with some mint leaves, salt, pepper, a splash of vinegar and 2 tbsp yoghurt.
  • Blend until smooth.
  • Toss the salad in the yoghurt dressing and serve as a side salad for whatever you like.
