Spring Side Salad

- Chop the lettuce and cucumber.
- Add to a large bowl with a handful of spinach.
- Add a small handful of spinach to a blender with some mint leaves, salt, pepper, a splash of vinegar and 2 tbsp yoghurt.
- Blend until smooth.
- Toss the salad in the yoghurt dressing and serve as a side salad for whatever you like.
