Fluffy pancakes, topped with macerated cherries, a gorgeous honey infused yoghurt, plus an extra honey drizzle for good measure.
Pancakes w/ Honey, Yoghurt & Cherries

- Halve the cherries and remove the stones, add the cherries to a bowl with 1 tbsp sugar, mix and leave to macerate for 1 hour.
- To make the pancake batter, add the flour, baking powder and 1 tbsp sugar to a large bowl, mix, then whisk in the milk, egg and 20g melted butter. Whisk until the batter just starts to become smooth. Leave in the fridge until ready to cook.
- Mix 3-4 tbsp yoghurt with 1 tsp Blossom Honey.
- Bring a frying pan to a medium heat.
- Add a small knob of butter to the pan.
- One by one, add a spoonful of pancake batter to the hot pan. There should be enough batter for 6 pancakes (3 each).
- Cook for a few minutes each side until nicely golden and cooked through.
- When ready, begin to stack the pancakes, adding a spoonful of the honey yoghurt between each pancake.
- Finally, top with more yoghurt, a spoonful of cherries and then a generous drizzle of Blossom Honey.
- Serve and enjoy!
