Nduja Potato Gratin

- Preheat the oven to 180˚C.
- Peel and thinly slice the potatoes, add to bowl of cold water for 5 minutes and then drain.
- Thinly slice the onion and finely chop the garlic.
- Mix the cream with the garlic, salt, pepper and thyme leaves.
- Grate the cheese.
- Lightly oil the bottom of an oven proof dish (a cast iron pan works very well).
- Add a layer of potatoes to the bottom of the dish, top with sliced onion, a drizzle of cream, nduja and then some cheese. Repeat this process until all the potatoes are used. Top with even more nduja and cheese.
- Bake for 90 minutes (reduce the heat halfway through if it’s browning too quickly).
- Serve and enjoy!
